This exceptional wine is elaborated with Verdejo grapes, It is a new variety in our area but very well adapted into the vineyard "Casa del Arbol" sited next to the Jabalon's river.
Once the winemaker has chosen the best time for the grape harvest, these are picked at night (when the fruit is fresh from the field) by machine. Then the grape juice follows a continuous process of maceration with its skins from 24 to 30 hours.
After that, the grape juice is separated from them by gravity and it is the moment when the fermentation starts under a strict temperature control inside the wine tanks.
Tasting notes
Colour Very bright, yellow with green marked tones.
Nose Intense and fruity with hints of green apple.
Taste Very fresh, well balanced into the mouth, very elegant, rounded and long at the end.
Food pairing This wine is particularly recommended for all kinds of fish, seafood, pasta, chicken and cold meats.
